Ingredients

2 avocados chopped
1 cup diced tomatoes
½ small red onion, diced
1 cup corn
1 cup black beans
2 tbsp extra virgin olive oil
2 tbsp lemon juice
½ cup cilantro chopped
Sea salt and pepper to taste

Method

For dressing, whisk together olive oil, lemon juice, and cilantro in a small bowl. In a separate bowl combine avocado, tomato, onion, corn, and beans. Add dressing and mix. Add salt and pepper. Enjoy!
