Pomegranate Chia Seed Pudding

Deliciously nutritious! I absolutely love chia seeds because they are full of nutrients and you can use them in so many different ways. Chia seeds are a plant source of protein and omega-3 fatty acids, packed with fiber, calcium, magnesium, antioxidants, and more! If you haven’t already, you must give it a try.


1/4 cup chia seeds

1 cup unsweetened almond milk (vanilla flavor)

1 cup plain greek yogurt

2 tbsp raw organic honey

1/8 tsp kosher salt

Toppings: pomegranate and roasted almonds (or fruit and nuts of your choice)



Whisk almond milk, yogurt, honey, and salt in a bowl. Then, mix in chia seeds and stir until blended. Cover and refrigerate overnight.

Next day, add fruit and nut toppings and enjoy!

Yields 4 servings.
